If you don’t have all these things on hand, feel free to improvise and work with what you have. It’s ok if the cake bits crack a bit as you bend them into place. Repeat the process on top of each ruffle garland to create a double ruffle garland. Use Wilton Tip 1M to pipe swirls onto the cake wherever you’d like. Using the Wilton 5, pipe the garlands along the side of the cake.

It can be stored in piping bags or an airtight container in the fridge for up to a month, or in the freezer for up to 3 months. Place a small round piping tip like a Wilton 10 on the lightest brown bag of buttercream and pipe small hearts on the side of the cake where the semicircles meet. Secure a small French tip on the darkest bag of chocolate buttercream and pipe a shell border around the top edge and base of the cake. Then add a second, thicker layer of frosting to the cake and smooth using a bench scraper and a small offset spatula. Bake the cake layers for minutes, or until a toothpick inserted into the middle of the cake comes out with a few moist crumbs.

You may think the only route to a heart-shaped cake starts with using a special cake pan, but we're here to tell you that this just isn't the case. The technique we're sharing does not require any special equipment beyond a round and a square cake pan, which you likely already own. You can make any cake you love—we chose our favorite chocolate cake, then simply pieced it together to form a heart shape. Pink, of course, is the perfect color frosting for Valentine's Day, but you can feel free to get creative here, too.
After assembling, crumb coating, and frosting the cake, I divided the remaining buttercream into 3 separate bowls. I added slightly more to one of those bowls (roughly ½ of the buttercream in one bowl and ¼ of the buttercream in each of the other bowls). In the bowl with the most buttercream, I used 2 drops of AmeriColor Fuchsia + 2 drops of AmeriColor Deep Pink to create a bold fuchsia color. In the second bowl, I used 2 drops of AmeriColor Deep Pink to create a darker pink color. I kept the third bowl the same light pink color I started with.
Spread a little buttercream onto it before adding the first cake layer on top. Position the two curved pieces that you cut off in Step 1 to be the top of the heart, then pipe on some buttercream “glue” to adhere them. Crumb coat the cake with a thin layer of buttercream to really emphasize the shape of the heart and lock in all the crumbs. Place the crumb coated cake into the refrigerator for at least 30 minutes to let the frosting firm up. Unless you’re planning on serving the cake on the turntable after you decorate it, trim the 8-inch cardboard cake round in the same way you trimmed the cake layers. This will end up being the foundation of the heart-shaped cake and will make it much easier to transfer the cake off the turntable after you’re done decorating.
I like to use a bit of frosting to stick the trimmings to the cake layer, then chill the cake in the freezer. Cut the cake layer along those lines with a serrated knife. Press the cake trimmings against the top of the cake to make the top of the heart. I started with 3 batches (about 9 Cups) of my vanilla buttercream recipe which was tinted pink with one drop of AmeriColor Deep Pink.
Add a thin coat of frosting around the cake to fully cover the cake layers. Spread an even layer of buttercream between the cake layers with a large offset spatula. Place the top cake layer upside down to make it easier to get sharp corners. I chose to make this cake with chocolate American buttercream because it’s sturdy and easy to pipe with.
Pipe the next shell directly onto the tail of the first. Place the cardboard base you created in Step 1 onto the turntable. Position the two curved pieces that you cut off in Step 1 to be the top of the heart, then use some buttercream to adhere them. As a result, there’s truly something for everyone– at every price point. Position the next layer of cake on top, adhering the curved pieces of the heart with buttercream just like you did with the bottom cake layer. I ended up tracing the cut cake pieces onto a piece of cardboard, then cutting out the heart shape with an x-acto knife to create a cake board for building the cake on. You can skip the handmade cake board if you’re planning on assembling and serving the cake on a larger cake drum. This design will work in all sorts of color palettes, but with Valentine’s Day around the corner I could not stop imagining an all-pink color palette. I used a mix of AmeriColor Deep Pink and Fuchsia to get three different shades of pink for this beauty.
